Five-Diamond Cuisine, a $3-Million Wine List, Arizona’s Only Master Sommelier

SCOTTSDALE Ariz.— Dining at The Phoenician is as diverse as it is inspired. Arizona’s most luxurious resort offers seemingly endless opportunities to satisfy guests’ appetites for fine food and spirits. For a more casual, modern dining experience, Windows on the Green
exudes warmth and local style. Its menu of imaginative Southwestern fare is
the creation of Chef de Cuisine Bobby Sanchez, who incorporates robust, indigenous
ingredients with more traditional elements to create such tempting selections
as a grilled Indian fry bread taco and Arizona mixed greens with toasted pepitas
and prickly pear vinaigrette. Diners are treated to whimsical regional art,
a hand-carved travertine fireplace, and expansive views that stretch from The
Phoenician’s lush golf course to the mountains beyond.
For Arizona’s most lavish Sunday Brunch, guests descend a dramatic marble staircase
into the Terrace Dining Room. This serene and expansive space,
whose focal point is a Steinway grand piano, also serves award-winning Continental
cuisine with an “Italian Flair” for lunch and dinner, and American regional
favorites for breakfast. The piano’s ivories come to life every evening and
during Sunday brunch, providing sophisticated entertainment for diners who can
choose to enjoy their meal indoors or al fresco on The Terrace’s patio overlooking
the croquet lawn, gardens and sparkling pools.
Just off the main lobby, The Thirsty Camel Lounge is a comfortable
retreat with spectacular desert views. Complementing an intermezzo menu are
a full range of beverages, specialty drinks such as the signature Phoenician
Perfection (made with 150-year-old anniversary Grand Marnier), and a humidor
that includes rare, pre-embargo Cuban cigars. Classical piano or strings provide
a relaxing accompaniment.
Quick Bites and Casual Fare with Phoenician Flair
The Phoenician’s signature homemade ice cream takes center stage at the Café
and Ice Cream Parlor, a lively, family-oriented spot that also serves
up freshly baked pastries, cappuccino, deli salads and sandwiches. Breakfast,
lunch, dinner and anytime-of-the-day snacks are available for take-out or dining
indoors and out.
Other casual dining options include the Oasis and Canyon
Pool Grill, offering poolside menus of salads, sandwiches, snacks and
refreshing beverages; The 19th Hole, the perfect venue for
after-golf refreshments, including sandwiches and hamburgers hot off the grill.
Singular Sensations: Private Dining Under the Stars
For the ultimate romantic indulgence, couples can enjoy a private candlelight
dinner in a secluded outdoor nook at one of the resort’s private Garden
Retreats or Tee Box Eight – the highest point of The
Phoenician’s Desert Golf Course, nestled on Camelback Mountain. Couples can
select a menu from any of the resort’s restaurants and wine from its expansive
cellars. These are formally served on the finest linens, crystal and china by
a tuxedoed waiter. A musical serenade can be arranged to heighten the mood.
After dining, the twosome can settle into lounge chairs for after-dinner cordials.

Greg Tresner, Arizona’s only master sommelier, presides over The Phoenician’s
two wine cellars, whose extraordinary selection of vintages
has earned international recognition. This extensive collection boasts more
than 45,000 bottles and 2,200 labels from around the world. The wine lists have
earned Wine Spectator’s Grand Award, a “Best of” Award of
Excellence for The Terrace and an Award of Excellence for Windows on the Green.
The Praying Monk’s barrel-vaulted ceilings and brick archways
set a dramatic tone for upscale business and social gatherings. Named after
a nearby rock formation, this Renaissance-inspired salon and working wine cellar
offers private dining in a setting that showcases antiques, artifacts and richly
tapestried furnishings.
Afternoon tea is served daily in classic British tradition in the Lobby
Tea Court. Voted Best Afternoon Tea by New Times and Arizona Republic
readers, it includes a lavish spread of delicate finger sandwiches, fresh scones
with Devonshire cream and preserves, pastries and a selection of fine teas,
accompanied by live classical music.
In-Room Dining with a Difference
Guests can also dine in-room – complete with fresh flowers and crisp linens
– from a select menu of breakfast, lunch, dinner and snack items served by The
Phoenician’s attentive room service staff. Hot tea is poured from specially
designed pots that strain loose tea, while bread is toasted on the spot to ensure
it is piping hot and crisp. Restaurant-style service, course by course, is available
upon request. Gourmet homemade baby foods and a children’s menu are also available.
